Our first sausages were made as they have always been made here: with respect, patience, and a deep connection to the land. We weren't looking to create just another product, but rather to capture that spirit that makes Basque culture so recognizable anywhere in the world.\n

There was one ingredient that showed us the way forward: Espelette pepper. Its warm, elegant, and lively aroma matched what we wanted to convey. It wasn't just a condiment: it was a statement of intent.
