MENDIKO CHORIZO
A finely minced chorizo with a flavor reminiscent of farmhouse sausages, those that are slowly cured in the shelter of the mountains. Its balance of spices and natural aroma give it a mild but distinctive character, without acidity and with a very pleasant hint of paprika. Its tender and juicy texture offers a tasty and easy-to-enjoy bite. Perfect for cutting into thin slices and enjoying in sandwiches, appetizers, or at any time of day. Once cured, the chorizos measure approximately 28 mm in diameter and 230 mm in length and weigh approximately 0.200 kg. They are cylindrical, candle-shaped, and have a compact consistency to the touch, a rough exterior, with the casing well adhered and no mold.
Its color is reddish (brownish red to bright red), characteristic of products cured with paprika. They have a distinctive smell and taste, which comes mainly from the spices and seasonings used, together with the curing process.

Preparation
Mix minced pork in appropriate proportions to a maximum size of 10 mm. Salt, garlic, and spices are added to this mixture and kneaded to obtain a homogeneous and bound mass, which is vacuum-packed into collagen casings. The resulting pieces undergo a slow maturing-drying process in a temperature- and humidity-controlled drying room, achieving gradual water loss along with the development of organoleptic characteristics.

Conservation
Store in a cool, dry place at a temperature between 0 and 5°C. It is recommended to open the container a few minutes before consumption.
