HOMEMADE CHORIZO

A finely minced chorizo made in the traditional way, with a mild, balanced flavor that stands out for its naturalness. It offers a tender, juicy bite, without acidity and with just the right amount of paprika. A string-style chorizo with authentic homemade character, perfect for cutting into thin slices and enjoying in sandwiches, snacks, or as a bite to eat. The favorite for those looking for a flavorful but mild chorizo.

Once cured, the chorizos measure approximately 25 mm in diameter and 220 mm in length and weigh approximately 0.200 kg. They are cylindrical, string-type sausages with a compact consistency to the touch, a rough exterior, tightly adhered casing, and no mold.

They are reddish in color (brownish red to bright red), characteristic of products cured with paprika. They have a distinctive smell and flavor that comes mainly from the spices and seasonings used, along with the curing process.

Preparation

Mix equal proportions of pork shoulder and pork belly, minced to a maximum size of 10 mm. Salt, paprika, and garlic are added to this mixture and kneaded to obtain a homogeneous, well-bound dough, which is vacuum-packed into natural pork casings.

The resulting pieces undergo a slow maturation-drying process in a temperature- and humidity-controlled drying room, achieving gradual water loss along with the development of organoleptic characteristics.

Conservation
