Before KODES became a brand, it was a simple idea: to preserve a scent. The scent of farmhouses, village markets, the gentle smoke that perfumes old kitchens, and that hint of pepper that awakens memories. A scent that cannot be explained, only felt.
KODES was born at the crossroads between tradition and desire. The tradition of a land that cooks without haste, that respects the product and understands that flavors are not invented: they are inherited. And the desire to create a sausage that was not just food, but a story. A way of telling who we are, where we come from, and why we defend our way of understanding gastronomy.

In the Basque Country, cuisine is more than just a table set with food: it is a way of looking at the world. Every ingredient has its story, every recipe a reason, and every flavor a root.
Our first sausages were made as they have always been made here: with respect, patience, and a deep connection to the land. We weren't looking to create just another product, but rather to capture that spirit that makes Basque culture so recognizable anywhere in the world.
There was one ingredient that showed us the way forward: Espelette pepper. Its warm, elegant, and lively aroma matched what we wanted to convey. It wasn't just a condiment: it was a statement of intent. A bridge between the Basque Country and the French Basque Country, between two sister cultures that share character, land, and gastronomic sensibility.
